Chicken Salad Sandwich

Sorry for the very long break! Here's my first recipe entry.

Chicken Salad Sandwich

You will need:
Two chicken breasts
Onion or shallots
Mayonnaise
Bread











Start by cooking the chicken. I cooked mine in the oven at 350 for 30-40 minutes. You can cook frozen chicken without defrosting it if you add 10 minutes to the cooking time.

Cut it up so it's easier to shred later.











I used shallots because it's easy to throw a few of them in the small blender I use. Remove the skin and chop off the ends. If you aren't used a blender, you should also chop up the onions now.

If you use an onion instead, only use a small amount so it's not overpowering.











If you don't use a blender or food processor, this is how you would shred the chicken. I took this picture after it was all shredded. Oops! Basically, hold the chicken with one of the forks and use the other to tear each piece into shreds.














If you're using a blender, throw in the chicken, shallots, and 2 tablespoons of mayonnaise. If it doesn't blend easily, add more mayonnaise or trying mixing it up with a fork.

If not, you can add all of the shredded chicken, chopped shallots, and mayo into a bowl, then mix! I prefer using a blender (it's actually a Magic Bullet) because my pointer fingers get tired from shredding.














Ta Da! Isn't it beautiful? I realize chicken salad isn't very aesthetically pleasing, so maybe I'll try to cook something more colorful next time.











Spread on bread and enjoy!

For a tasty alternative, try this with barbecue sauce! It works great with leftover chicken, too.

Welcome to Stop the Ramen!

My name is Kristen, and I'm currently a college senior. I like cooking for myself, but it's sometimes hard to cook for just one or two people. I'm making this blog for people like me who don't have a lot of money to spend on food especially if it will go bad before you use it.
